Recently I started sourcing the majority of our pork from one of my long-time internet friends who also happens to own a family farm! I picked up some pork shoulder steaks, which aren’t something that I typically buy or see in our local grocery store, but wasn’t quite sure what to do with them.
Good thing our resident, prolific recipe developer, aka, my husband, came to the rescue. He whipped up these spicy verde pork tacos one day recently and I was blown away.

How to make Smoked Verde Pork Steaks

Preheat
Fire up the smoker and set it to 225°F.

Prep
Combine all the dry spices and seasonings for the pork steaks and rub it all over them.

Smoke
Put the pork steaks on the smoker and cook for 1 1/2 hours.

Braise
Remove from the grill, turn up the temperature to 325°F, cube the smoked pork steaks, and put the cubes into a grill-safe baking dish. Pour the verde sauce ingredients into the pan. Cover tightly with foil. Cook for another 1 1/2 hours.

We like to eat this in tacos, but you can enjoy it however you’d like!

What’s the best way to store leftovers?
Throw these in an airtight container in the fridge for up to 3-4 days, ideally.
How should you reheat the leftovers?
This one is pretty forgiving, so the microwave works just fine for reheating. You can also throw the meat and sauce in a pan on the stove too.
Are there any substitutions for the jalapeño powder?
If you don’t have any jalapeño powder you can still make this dish. It can be omitted, or you can toss in some cayenne pepper for the heat if you like it spicy. Another option is to use a green jalapeño-based hot sauce. Make it your own!

Traeger Verde Pork Steaks
This tender, flavorful Smoked Verde Pork Steaks is one of my favorite meats to throw in tacos! We smoke the seasoned pork steaks before cubing them and braising in a simple verde sauce.
Ingredients
Pork Steaks
- 6 bone-in pork steaks
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon jalapeño powder (or cayenne)
Verde Sauce
- 2 cups green salsa (tomatillo-based)
- 1/2 cup water
- 1/2 teaspoon salt
- 1 teaspoon hot sauce (we used Cholula)
- 1 lime, juiced
Instructions
- Preheat the Traeger to 225°F.
- Rub the pork steaks on both sides with all of the steak seasoning mixture.
- Smoke for 1 1/2 hours.
- Remove from the grill and cube your pork steaks.
- Transfer the cubed steaks to a grill-safe baking dish, pour the verde sauce over, and cover tightly with foil. (The dish won't be taking on any more smoke at this point. Feel free to finish it in the oven if you want to save pellets.)
- Turn the grill (or oven) up to 325°F. Braise for an additional 1 1/2 hours.
