We catch a lot of halibut every year. Enough to supply our family and friends with several meals, to say the least, but this cut of fish is not one that most people are accustomed to preparing and serving.

Which is a shame, because this is one of the best pieces of halibut that I’ve ever had.

If you aren’t out catching your own halibut, you may be able to source halibut collar locally. Some grocery stores sell halibut collar, but it may not be available everywhere. High-end grocery stores, specialty fish markets, or stores with a good seafood section are more likely to carry it.

If you’re having trouble finding it, you might also check with a local fishmonger or seafood supplier. It’s also possible to place a special order if it’s unavailable.

Ingredients

  • 2 pounds halibut collar
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/2 cup pineapple juice
  • 2 cloves garlic
  • 1 tablespoon crushed ginger
  • 2 tablespoons sriracha sauce
  • 1 teaspoon crushed red pepper flakes
  • 1/4 cup oil
  • 1 tablespoon chopped cilantro
  • 1 tablespoon chopped green onion

Instructions

  • Mix all the dry and wet ingredients together in a one gallon ziplock bag.
  • Add the fish collars to the marinade and place in the refrigerator for at least two hours.
  • Preheat your grill to 450°F.
  • Take your fish collars out of the bag and place them directly onto the grill.
  • Cook for 10-12 minutes, then flip the collars over and let them cook for another 10-12 minutes.
  • Remove from the grill when done.
  • Serve over rice or stir fry noodles.
