Mix together the dressing ingredients in a mason jar and shake vigorously until it is emulsified. Set aside.
Combine the pork patty ingredients and mix together until everything is well combined.
Shape the ground pork mixture into 6 equally-sized patties. Place into the preheated grill and cook for 4-6 minutes per side, or until the internal temperature reaches 160°F, whichever comes first.
Remove from the grill and let cool.
While the patties are cooking, prep your salad ingredients and assemble in a large bowl for serving family style, or in individual bowls if you're prepping everything individually or for take-and-go lunches.
Drizzle the dressing over the pork patties and then over the salad. Serve together and enjoy!
If you need some carbs in your life, add in some grilled toasty pita bread strips. This mixture is also excellent served inside a pita pocket.
