These fluffy scrambled eggs are cooked on the griddle and don't require any special tools, molds, or anything else to get a pile of scrambled eggs that are delicious and the perfect texture.
Squirt a little water on the griddle surface. Let it bubble a bit and the scrape away from the cooking surface. This cools down the griddle a bit so the eggs don't cook too fast.
Melt the butter on the griddle. Pour about 1/4 cup of the eggs onto the melted butter and stir with a spatula. Once they are slightly set, pour a little more eggs right on the top of the other eggs.
Continue to pour, stir and flip, and pour more eggs on top of the other eggs, slowly, until all of the egg is on the griddle. This helps build up your eggs so they don't spread too much or brown on the griddle surface.
Once the eggs are set you can remove from the griddle and serve hot.
