Start your griddle and preheat it on medium high heat.
While your griddle is preheating, prepare your vegetables by removing any stems from your peppers and tomatoes and removing the skins from the onions and garlic cloves.
Pour your oil onto the center of the griddle and place all the vegetables on the griddle in the oil.
Cut the lime in half and place the two halves flat onto the grill.
Let the vegetables cook for 2-3 minutes and then turn.
Turn every 2-3 minutes until all sides of the vegetables have blackened scorched marks on them.
Pull all the vegetables and the lime off the griddle.
Place the vegetables into a blender and pulse. Squeeze in the lime and add salt.
