Preheat your grill to 325°F. Put a large pot of well-salted water on the stovetop to boil. Peel, wash, and dice your potatoes into quarters.
Season all sides of the pork chops with the Spicy Pork rub (or your favorite sweet & spicy bbq rub).
While the grill is preheating and the pork chops are cooking, combine all of the barbecue sauce ingredients in a saucepan and bring to a simmer.
Once the water boils, add the potatoes and cook until fork-tender.
Drain the potatoes well and place the pot back on the stovetop over low heat. Let the remaining liquid cook out, stirring frequently.
Add the butter and cream to the pot and mash until smooth. Add salt and pepper to taste.
Stir in the cheese and cover the pot to stay warm.
Once the grill preheats, add the pork chops. Cook for 10 minutes before flipping.
Continue cooking until the internal temperature reaches 130°. Next, paint with BBQ sauce on both sides and continue to cook until the internal temperature reaches 140°F. You can paint them with another coat of sauce if you want.
Slice the pork chops after a 3-5 minute rest, and serve with more of the Guinness BBQ Sauce and some Kerigold Dubliner Cheesy Mashed Potatoes.
