Spanglish Asadero All-Purpose rub

Spiceology Flavor Hog Sweet and Spicy Pork blend

Sauce

Blues Hog BBQ sauce
2
tablespoons
butter

tablespoons
apple cider vinegar
Instructions
Cut the pork shoulder into 2” chunks
Mix the dry ingredients together.
Coat the pork shoulder chunks evenly with 4 tablespoons of the rub.
Put a medium fry pan on the stove at medium high heat.
Add the oil to the fry pan.
Add the meat chunks to the fry pan and brown all sides.
Remove the meat from the fry pan and let cool off.
Put your meat chunks onto large skewers with at least 1/2” space between each piece of meat.
Start your grill and heat it to 250 degrees.
Place directly onto your grill and let cook for about 3 hours; turning your skewers every hour.
Melt your butter and mix in with your bbq sauce and apple cider vinegar.
After your meat has cooked to the desired for three hours, check for tenderness.
If the meat is getting tender enough, brush a coat of the sauce onto all sides of the meat.
If the meat is not tender enough, keep cooking until it is.
After the first coat of sauce goes on, turn your grill temperature up to 325 degrees.
Let cook for another 45 minutes, adding another coat of sauce every 15 minutes.
Remove from the grill and serve with the rest of the sauce.
