This simple ham and cheese tortilla quiche is the perfect breakfast to whip together for a weekend brunch. This also works great as a meal prep option. It reheats so well!
Preheat your oven, air fryer, or Traeger to 350°F.
Line a pie plate with parchment paper. Press a tortilla into the bottom of the pan.
Cut the ham into small pieces. Whisk together the eggs, milk, salt, and pepper.
Add half of the ham, cheese, and egg mixture on top of the first tortilla. Top with another tortilla, the rest of the ham and eggs, and finally the cheese.
Place into your preheated cooking device of choice and let cook for 20 minutes. Check, and cover (if necessary) with foil to prevent excess browning. Continue cooking until the eggs are set. Typically another 10-15 minutes is needed.
Remove and let cook for 10-15 minutes before slicing and serving.
