Melt the butter in a small non-stick skillet. Whisk in the flour, and cook over low to medium-low heat, stirring frequently, until the mixture is lightly golden brown.
Add the chicken bone broth to the pot and whisk. Add the garlic powder, onion powder, and pepper. Bring to a simmer and continue to cook until thickened.
Add the broccoli florets. Let simmer until softened.
In a blender, add the cottage cheese and heavy cream. Blend until completely smooth. Add in 1/2 cup of the hot liquid and blend until smooth again.
Reduce heat to low, and slowly whisk in the cottage cheese mixture. Let everything get hot, and stir in the shredded cheddar cheese.
Taste, and add salt if necessary.
Serve hot. Add in some cooked Air Fryer Chicken Breast for extra protein.
