These high-protein Egg bites are such a great breakfast or mid-day snack option! Easy to make ahead of time, heats up quickly in the microwave, and tastes incredible!

Silicone Egg Bites Mold
Ingredients

extra large eggs

heavy whipping cream

cup
cottage cheese
¼

salt

butter

shredded cheddar cheese

breakfast sausage

ounces
crumbled bacon
Instructions
Preheat your oven to 350°F.
Fill a 9x13 cake pan with 1” of water and put it into your oven.
Brown the sausage in a small sauté pan over medium heat. Drain the fat and set aside to let cool.
Crack the eggs into a bowl. Add the cream, cottage cheese, and salt and mix thoroughly with a fork or whisk.
Melt the butter in the microwave and pour into the egg mixture. Stir to combine.
Lightly spray you egg mold with cooking spray.
Pour the egg mixture into the egg mold; leaving a 1/4” of space at the top.
Sprinkle some of the cooked sausage into each egg mold.
Sprinkle a little of the rub on top of each egg mold.
Sprinkle a generous amount of the shredded cheese on top of each egg mold.
Place the egg mold into the water bath in the oven and let cook for 25-30 minutes.
Take the egg mold out of the oven and let cool for 2-3 minutes.
Slide a butter knife all the way around the edges of each egg mold to make it easier to remove from the egg bites.
When the egg bites are removed from the mold, you can eat them as is or add any condiments you wish.
