Shepherd's Pie Baked Potato
Baked potatoes have never been better! We made a homemade Shepherd's Pie filling and heaped it on top of smoked baked potato.

Instructions
Preheat your pellet grill or smoker to 375°F.
Wash off your potatoes and pat them dry. Rub with the olive oil and sprinkle all sides with salt.
Poke some holes into each of the potatoes and place onto the grill.
In a large skillet on the stovetop, brown the ground beef and break it up into small pieces.
While it is cooking, season the meat with the salt, pepper, garlic powder, and onion powder.
Add the minced onion to the pan and let it cook along with the ground meat.
Once the meat is cooked, remove all but a few tablespoons of the grease from the pan.
Add the butter to the meat and let it melt.
Mix in the flour and stir until it is evenly incorporated into the meat.
Add the beef stock, sherry, and the frozen vegetables.
Let the mixture come up to a simmer and stir frequently until thickened. Keep warm until the potatoes are done cooking.
Once the potatoes are done, make a slice in the top and squeeze from both ends to open.
Heap the meat mixture on top and enjoy hot!
Notes
* If using table salt cut the amount to 1/2 teaspoon.
