large ripe avocados

sourdough bread

salt

granulated garlic

teaspoon
onion powder
½
teaspoon
black pepper

Anaheim pepper
thinly sliced

eggs

teaspoon
fresh cilantro

teaspoon

Instructions
Cut the avocados in half and remove the pit.
Place on your smoker set at 165 degrees.
Leave on the smoker for 30-40 minutes.
Remove from the smoker, scoop out the flesh with a spoon, and put it into a bowl.
Add in the salt, pepper, garlic, and onion powder.
Mash the avocados and dry ingredients with a fork until only very small chunks of avocado are in the mix.
Toast your sourdough slices and then cut off the edges of the crust (or not - if you like crust.)
Put a small pot of water on your stovetop and bring to a simmer.
Crack your eggs into the simmering water and poach them.
Cut your sourdough toast slices in half and spread some avocado mixture onto each one.
Lay a poached egg on top of each piece of toast.
Sprinkle the everything bagel rub on top of the eggs.
Garnish with the sliced pepper and cilantro.
