Cream Cheese Swirl Brownies
I don’t know about you guys, but back-to-school seriously couldn’t come fast enough this year.
Not only do I love baking season and fall roasts and apples and all things fall, but oh my gosh. This summer was LONG.
I started the WAHM (work at home mom) life back in 2014, and since then summer has taken on a whole new meaning.
Have you ever priced out day camp for 4 kids? No? I don’t suggest it. I’d need 3 more jobs to pay for that and it just isn’t realistic.
That means that not only am I rocking it trying to keep up with this blog thing I’ve got going on, in addition to working full time at the very best job I’ve ever had, I’m also playing full time referee and trying to keep the chaos to a minimum while I get stuff done.
Or attempt it, at least.
Mostly it is just me trying to type more than 3 sentences without getting interrupted, and then working around the clock to try and make up for my general lack of productivity during the day.
Fun times.
That’s why I big puffy heart back-to-school, and shortcuts like Pillsbury brownies! Anything that can shave time and clean up off of our typical baking routine (which is non-existent during the summer.) You may remember these awesome Galaxy cupcakes we made this summer!
I love making real-life experiences into learning opportunities, and baking is a great way to teach little ones about fractions, measurements, & temperature. I’ve been loving the Pillsbury Filled Pastry Bag for projects with the kids that I don’t necessarily have alllll of the hours to complete or clean up.
They are super easy to use, come pre-filled, and with star tips already on them, like this Chocolate Fudge Frosting did.

I love the Pillsbury family sized box because it makes enough to feed even MY huge family. A 13×9 pan is a huge help when this hungry crew comes home off the busses.
Mix these brownies up according to package directions. Make sure not to overmix!
Mix up your cream cheese mixture in a separate bowl. Make sure the cream cheese is softened!
Spread your brownie mix into the pan evenly.
Spoon dollops of the cream cheese mixture over the brownie mix, and use a butter knife to gently cut drag through the brownies to swirl the two together.
Bake at 350 for 28-30 minutes.
Don’t let anyone get too impatient while you are waiting for them to cool down!

These make me think of a cream cheese brownie that I had at my high school graduation party forever ago. They were sooo good and I was so upset later because my grandma gave all of them away to people leaving without me knowing. I need to try these and see if they're as good as I remember!

:D :D LOL @ "forever ago". You definitely graduated very recently, in my mind. Or you are just aging REALLY REALLY well, which, #goals. These brownies are awesome! I don't know if they'll compete with Grandma's though, but I hope they come close!

I big puffy heart back-to-school for many of the same reasons, but I sure do miss her while she's at school. What a fun and tasty treat. I love cheesecake and brownies, so this is the perfect mash-up!
