What are Chicken Leg Quarters?
Chicken leg quarters are the thigh and drumstick meat. Basically, the whole section of the leg.
Leg quarters are also pretty inexpensive too. You can separate them into thighs and legs if you want, but I prefer to leave them together and grill them as a whole piece. They are easier to separate after they are cooked, anyway.

How long does it take to grill chicken leg quarters?
Typically it takes around 40-55 minutes, depending on the size of your hindquarters. I always rely on a good meat thermometer rather than time, to ensure the proper internal temperature of 165-170°.

How to grill chicken leg quarters on a Traeger
First, preheat your grill to around 350-400°.
Next, season your chicken and close the lid. Cook for about 20 minutes per side, and don’t forget to keep an eye on the internal temperature to see if they are done. You can’t judge them by taste or feel, and even looks can be deceiving when it comes to bone-in chicken.
To check the internal temperature, insert your meat or instant-read thermometer into the thickest part of the thigh but not touching the bone. It should be at 165° for both white and dark meat.
The key to cooking chicken on the grill without burning it is to check it frequently. If it’s browning too fast, move to a cooler part of the grill. There are always “hot spots” on every grill, so get to know yours and adjust accordingly.
This is the best instant-read thermometer on the market, and I’ve tried a lot of them. Accurate and fast results, which is paramount when pellet grilling.

When do I put the sauce on the chicken?
I always slather on the sauce at the end when there are about 5 minutes left to cook, or it will begin to burn. Especially sweet chili sauce, which has quite a bit of sugar in it. Wait until the end of cooking, or drizzle on immediately after removing from the grill. You can also serve some sauce on the side.

Sweet Chili Chicken Leg Quarters
These delicious grilled chicken leg quarters are coated in copious amounts of seasoning rub, and then grilled on my wood-pellet grill. Then they get a slathering of sweet chili sauce, and it is ON.
Ingredients
- 8 chicken leg quarters
- 3 tablespoons oil
- LOTS of seasoning rub
- Sweet Chili Sauce
Instructions
- Preheat your grill to 350-400°.
- Brush the chicken with oil and then season with LOTS of seasoning rub. Pick your favorite! I like Spiceology's Korean BBQ or any Togarashi, as well as the Kendrick BBQ rub, personally.
- Place skin-side up on the grill, and grill for 15-20 minutes. Flip and grill an additional 10-20 minutes. When the chicken gets to about 150°, crank up the grill to high and finish off the grilling until the internal temperature is 165°. Slather on the sauce during the last 5 minutes for best results.
- Pull off the grill and let rest for 10 minutes before serving.
