Dungeness Crab Scampi Recipe
With how much I love crab, I can’t believe I’ve never had crab scampi before! It was a natural fit to want fresh crab legs in that garlic-infused wine and butter sauce, and cooking it on the Blackstone made it a snap.

How to make crab scampi on the griddle
Since crab gets cooked right after it is caught, all you need to do after you bring it home from the store is heat is up again, essentially.
Sometimes people steam crab, sometimes they bake it, and sometimes they cook it on the grill as we do in our Traeger Snow Crab and Traeger King Crab Legs recipes, but this time we wanted to coat these in the sauce and really get the garlicky goodness all over the crab.
If starting with frozen crab, steam for 5 minutes before starting. If the crab is already thawed you can go right onto the griddle.
- Preheat your griddle over medium heat.
- Place the crab on the griddle and season with all of the seasonings and the garlic and flip over.
- Drizzle with butter.
- Pour wine over crab, cover, and let steam for 2-3 minutes.
- Using a bench scraper, keep scraping and spooning the wine/garlic/butter sauce over the top of the crabs.
- Remove and serve hot!
What kind of crab works with this recipe?
There are several types of crab that are common in the United States, including King crab, Snow crab, Dungeness crab, Stone crab, and Blue crab.
This recipe would work for all of those besides the stone crab, whose shells are too thick to really allow any of the sauce to get into the crab meat.
With King crab, I’d also make sure to split them before cooking to get the full effect.
In these photos, and in the recipe, we used Dungeness.

What can you serve with Blackstone Crab Scampi?
With a seafood feast, there are lots of options to choose from. I like to recommend my Creamy Asparagus Pasta and Grilled Cheddar Bay Biscuits right off the bat. It is like a homemade Red Lobster dinner, and I’m here for it. You can even throw in a huge Lobsterita, for good measure.
If you need some more green in your life, a homemade Caesar salad would be perfect.

Blackstone Crab Scampi Recipe
Steamed crab is coated in garlic, butter, and white wine while being cooked on a gas griddle. The sauce gets in all the nooks and crannies of the crab and infuses the whole thing.
Ingredients
- 6 pounds pre-cooked crab
- 1 cup melted salted butter
- 2 teaspoons kosher salt
- 1 tablespoon Old Bay seasoning blend
- 2 tablespoons minced garlic
- 1 cup dry white wine
Instructions
- Preheat your griddle over medium heat.
- Place the crab on the griddle and season with the salt and Old Bay and toss to coat. Spoon on the garlic, and then drizzle with butter. Cook for a minute, using the tons to move the crabs and garlic butter around on the griddle.
- Pour the wine over crab, cover, and let steam for 2-3 minutes.
- Using a bench scraper, keep scraping and spooning the wine/garlic/butter sauce over the top of the crabs.
- Remove and serve hot!
