This festive Sparkling Cranberry Prosecco is easy enough to make at the last minute, but fancy enough to serve at any holiday gathering. Cranberry juice cocktail is mixed with your favorite prosecco before being served in a glass rimmed with cranberry sugar and garnished with sparkling cranberries.
Sparkling Cranberry Prosecco Holiday Cocktail
This simple cocktail is one of my favorite things to make when the holidays roll around. Bonus points if they are also easy. This one fits all of those bills and more.
I got the idea for this cocktail while I was making a batch of Sparkling Cranberries, and the sugar I was rolling the cranberries in was turning such a pretty shade of pink, and I thought it would look beautiful on the rim of a glass.

You sure can! Just sub in sparkling water or lemon-lime soda in place of the prosecco for a non-alcoholic version of this fun and festive drink.
How to make sparkling cranberries
- Make simple syrup and let cool.
- Soak cranberries in cooled simple syrup overnight.
- Drain in a colander and roll in sugar.
- Set aside to dry and harden.

Sparkling Cranberry Prosecco
Easy festive cocktails are my forte, and this one is my favorite of them all! Just 4 ingredients and you'll have a deliciously sweet sparkling cranberry prosecco!
Ingredients
Sparkling Cranberries
- 2 cups cranberries
- 2 cups sugar, divided
- 1/2 cup water
- 1/2 teaspoon vanilla
Sparkling Cranberry Prosecco
- 1 bottle prosecco
- 3 cups cranberry juice cocktail
Instructions
Sparkling Cranberries
- Make your sparkling cranberries by combining 1/2 cup of sugar, the vanilla, and 1/2 cup of water in a saucepan over medium heat. Cook for a few minutes, until the sugar fully dissolves into the liquid.
- Let the liquid cool for 10 minutes and then add the cranberries and let soak overnight.
- Drain the berries, reserving the simple syrup for another use, and let dry for 20-30 minutes before rolling in the other 1 1/2 cups of sugar.
- Set the berries on a tray to harden, reserve the cranberry sugar to rim the glasses.
Sparkling Cranberry Prosecco
- Combine one bottle of chilled prosecco with 3 cups chilled cranberry juice cocktail in a large pitcher.
- Place a bit of the simple syrup on a plate and rim your glasses with the simple syrup before dipping them into the cranberry sugar.
- Carefully pour in some of the chilled cranberry prosecco, and then add a few sparkling cranberries to a toothpick and place across the rim of the glass.

do you refrigerate the cranberries when soaking over night?

I do not. Refrigeration can make the sugar crystalize. As long as you are using fresh cranberries you should be fine letting them soak overnight.

what is the vanilla for? It is not used in the instructions.
