Grilled Marinated Pork Chops
Pork chops are one of those dishes that a lot of people grow up hating. Mostly because back in the olden days the USDA recommended criminally overcooking them, so by the time they were “done” they resembled dry pork jerky more than a tender pork chop.
It is true that pork is much leaner than other types of meat, so it has a tendency to dry out more quickly than other more robust proteins, cooking it to the correct temperature (140-145°F) and using a marinade such as my Pork Chop Marinade Recipe, will do a LOT to ensure that you get tender, juicy, delicious pork chops everytime.
Part of the reason I love this recipe so much is how easy it is to throw together. You can take chops out of the freezer, toss them in the marinade, leave it in the fridge overnight, and your dinner will be done in about 30 minutes. I’m terrible at remembering to thaw things beforehand, so this little hack saves us from a LOT of takeout.

How to make Grilled Marinated Pork Chops

Marinate
Mix up the marinade and put the pork chops in. Let them sit in the fridge for at least 4 hours, but overnight is best.

Preheat
Fire up the grill and let it get all the way up to 350°F.

Grill
Drain the marinade and discard. Season the chops with salt and pepper. Grill until the internal temperature reaches 135°-140°F.

Tent
Tent the cooked chops with foil and let them rest for 10 minutes. The internal temp will rise a bit.

What kind of pork chops work best with this recipe?
Any of them! There are many different types of chops and all of them work well with this marinade. Cuts like rib chops, loin chops, sirloin chops, blade chops, boneless chops and center cut chops. Pick what’s on sale, pick your favorite, and get marinating!
Can you cook these on a gas or charcoal grill?
Yes! Any kind of grill will work for this recipe. You can even use a griddle or cast iron pan on the stove. You can even bake these if you want to. Just use a good wireless thermometer and make sure that you don’t overcook them!
What’s the best way to store and reheat leftovers?
I toss these in a freezer baggie and keep them in the fridge. Leftovers with pork chops are tricky, but I like to use them in a quick stir fry or just a quick pan-fry in butter JUST until they are warm.

Pork Chop Marinade
This bright and flavorful pork chop marinade is perfect for your next bbq! Lots of bright citrus and fresh herbs always ensure you have flavorful, juicy pork chops.
Ingredients
- 1 cup water
- 1/4 cup olive oil
- 1/4 cup fresh squeezed lemon juice
- 1 lemon, thinly sliced
- 3 cloves minced garlic
- 2 sprigs fresh thyme
- 1 tablespoon honey
- 1 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons apple cider vinegar
- 1 tablespoon chopped parsley
Instructions
- Mix all the marinade ingredients together and shake or stir to combine.
- Place the pork chops into a large baggie along with the marinade and put in the refrigerator for at least 3 hours. Overnight is better.
- Drain off the marinade and season your chops with salt and pepper. Cook using your desired method. We like grilled chops on the pellet grill the best!

Grilled Marinated Pork Chops
Marinated pork chops are one of our favorite quick dinner recipes! Tender, juicy, and packed with flavor, you can't go wrong!
Ingredients
- 1 batch Pork Chop Marinade
- 6 center cut pork chops
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Put the chops into the marinade and let them soak for at least 4 hours. Overnight is better, but 4 hours will do!
- Preheat the grill to 350°F.
- Drain off the marinade and season the chops with the salt and pepper.
- Grill for 5ish minutes per side, depending on the thickness of your chops. Internal temperature should be 135°-140°F when they are pulled from the grill.
- Let them rest, tented, for 10 minutes before serving.
