Making a legit Smoked Pulled Pork butt might be easy, but it takes a long time. If you’re going to put that kind of time and effort into pulled pork, you might as well make a big one. Or a couple of big ones. Pulled pork freezes well, and you can make many dishes with your delicious leftovers. If you scroll down a bit, I’ve got a whole list of suggestions.
These aren’t your typical nachos. They are more BBQ than spicy Mexican-style, and the cowboy candy adds sweet and spicy notes to the whole dish that you can’t replicate in any other way.
I’ve seen cowboy candy at some stores lately, but you can always make it if you can’t find it. It is simple to make and tastes great! I have a great recipe for Cowboy Candy here!

How to make BBQ Pork Nachos

Can this dish be made in advance?
The pulled pork can be made ahead of time, but the assembly should happen right before cooking and eating. Nachos don’t make great leftovers.
What’s the best way to store and reheat leftovers?
It is best to only prepare as many nachos as you can eat in one sitting. If you do wind up with extras, store them loosely covered in the fridge. Reheat in the oven, and hope your chips aren’t too soggy. 😉

BBQ Pork Nachos
One of the best plates of nachos we've ever made! These nachos feature smoked pulled pork, cowboy candy, tons of cheese, and black beans, and tangy BBQ sauce!
Ingredients
- 15 ounces Juanita's Tortilla Chips
- 6 cups shredded Colby Jack cheese
- 4 cups smoked pulled pork
- 1 tablespoon BBQ rub (suggestions below)
- 2 cups black beans
- 1/2 cup cowboy candy or pickled jalapeños
- 1/2 cup BBQ Sauce
Instructions
- Preheat your oven or your Traeger to 350°F.
- Build your nachos on a large sheet pan. Season the pulled pork with the BBQ rub. Evenly distribute the seasoned pork, beans, and cheese over the chips.
- Heat until the cheese is melted and the meat is nice and hot.
- Top with the rest of your fixings and serve hot!
