These Smash Dumplings are made in the style of the Korean Mandu, with all of the flavors that you want with traditional pot stickers or dumplings but none of the work folding and pleating a whole pile of wrappers. Just mix the filling together, spread over the wrappers, and slap them down on a griddle or a hot fry pan. Then we moved onto Smash Burger Tacos, essentially a Big Mac in smash form, cooked inside a tortilla. Crazy and amazing. We’re smashing everything we can these days, but of all the things I’ve smashed, these Smash Mandu might just be my favorite.

How to make Smash Dumplings
Wondering what you’re getting yourself into when you make this dish? Here’s a quick overview of the process! Make sure you follow the instructions at the recipe card at the bottom of the post while you’re cooking.
- PrepBoil the glass noodles as per package directions, then rinse in cold water. Blanch the shredded cabbage in the same boiling water, rinse, and drain well.
- Chop & MixChop the noodles and cabbage into sections, and mix with the ground pork, mirin, soy sauce, garlic, ginger, and green onions.

Smash Mandu Dumplings
Ingredients
- 1 cup napa cabbage thinly sliced
- 2 ounces Korean Glass Noodles
- 1 teaspoon sesame oil
- 1 pound ground pork
- 1 teaspoon mirin
- 1 teaspoon Korean sweet soy sauce
- 1 teaspoon minced garlic
- 1/2 teaspoon minced ginger
- 3 green onions chopped – green and whites
- 1 package round gyoza or mandu wrappers
Instructions
- Put a pot of water on the stove over high heat and bring to a boil. Add the glass noodles and cook according to package directions. Remove with tongs, place into a bowl, and rinse in cold water. Keep the boiling water going.
- In the boiling water, quickly blanch the shredded cabbage. Remove from the water, rinse in cold water, and drain well.
- Cut the glass noodles and cabbage into 1-2 inch sections with scissors. Soak up any excess water with a clean kitchen towel or lint-free paper towel.
- Mix together the ground pork, mirin, soy sauce, garlic, ginger, and green onion. Now gently mix in the cabbage and glass noodles.
- Preheat a griddle or a large skillet on the stove over medium to medium-high heat.
- Spread about a tablespoon of the filling mixture over a wrapper. Place the wrapper meat-side-down onto your cooking surface.
- Cook for 1-2 minutes.
- Lightly spray wrapper side that is facing up with avocado oil spray, or brush lightly with oil.
- Flip the dumpling over and carefully fold in half. Cook each side of the folding dumpling until they are golden brown and crispy.
- Remove and serve hot with your favorite dipping sauce.
