Traeger Brown Sugar Pork Chops combine the natural succulence of pork chops with a sweet and savory sauce, creating an incredible blend of flavors. Grilling the chops on a Traeger infuses them with a subtle smokiness, but not enough to become overwhelming. Simple ingredients can be transformed into an extraordinary meal with the right techniques and flavors.

If you don’t have a pellet grill or smoker, you can make these right on the stovetop instead. Just sear on the stovetop in the cast iron pan, and use the same approximate times and temps as you would in the Traeger, just in the oven instead.

As with ALL of my recipes, cook to TEMP and not time. Times are just a very rough estimate, and ultimately good food is made by following the food, and not an arbitrary set of instructions.

  • Preheat and Prepare:
    Start by preheating your Traeger grill to 375°F. Brush the pork chops with olive oil and season them with seasoned salt.
  • Grill the Chops:
    Place the chops directly onto the grill grates and cook for 5 minutes per side, achieving a nice sear.
  • Make the Sauce:
    While the chops are grilling, combine butter, brown sugar, garlic, heavy cream, apple cider vinegar, and black pepper in a saucepan. Simmer until the sugar dissolves.
  • Bake with Sauce:
    Transfer the grilled chops to a grill-safe skillet, pour the brown sugar sauce over them, and reduce the grill’s heat to 300°F. Cook until the internal temperature reaches 140-145°F.
  • Rest and Serve:
    Allow the chops to rest for 10 minutes before serving, ensuring they’re juicy and flavorful.

  • Let simmer for 5 minutes over medium heat, whisking frequently, until the sugar is dissolved.
  • Place the pork chops into a cast iron pan or another type of grill-safe skillet in a single layer.
  • Pour the brown sugar sauce over the top.
  • Reduce the heat in the grill to 300°F.
  • Cook the chops for 15-20 minutes, or until the internal temperature reaches 140-145°F.
