Wondering if you have to hit the store? Here’s the list of items you’ll need to make this recipe. For specific amounts, please refer to the printable recipe card at the bottom of the post.

  • Smoked Pulled Pork – We always make a lot of pulled pork when we fire up the smoker, so there’s always leftovers. This is a great recipe to use those up! If you don’t have leftover pulled pork, you can use store-bought prepared pulled pork and it’ll still be awesome!
  • Beer – I prefer the flavor from a Blonde Ale here, but if you have a favorite, I won’t tell if you add a can of Busch Light to the batch. Cheers!
  • Masa Flour – Important for flavor and texture!
  • Cumin – Adds incredible flavor to the chili.
  • Garlic Powder – If you can find a toasted garlic powder, that’s ideal, but whatever you have in your cupboard will work.
  • Onion Powder – Do you guys put onion powder on just about everything? We do. I love the flavor it adds and I can sneak it past some of my onion-hating kids, too.
  • Oregano – Use fresh if you have it available, but dried will work too in a pinch!
  • Jalapeño – Leave in some of the membrane and seeds for extra spice.
  • Green Bell Pepper – Yellow or orange also works in this recipe if it is what you have on hand.
  • Yellow Onion – Or white. Or sweet. This part is pretty flexible! If you have onion-haters, make sure to chop them up really fine.
  • Rotel – Use your favorite flavor. I usually grab one of the “medium” heat levels with jalapeño added.
  • Navy Beans – Cannellini beans, AKA White Beans, also work well in this. You can use a combination of the two also, if that’s what you’re into.
  • Mexican Blend Cheese – Cheddar jack, colby jack, or just shredded cheddar also work. Or use cotija for a fun twist!
  • Sour Cream – Not optional when it comes to chili. It adds a smooth, creamy finish that you can’t duplicate!
  • Cilantro – We add this at the end for garnish (and flavor). If you have cilantro-hating people eating with you, it is easy to leave off.
  • Tortilla Chips – Crushed tortilla chips add great crunch. Serve them alongside the chili. Fritos also work well!

How To Make Pulled Pork Chili

Wondering what you’re getting yourself into when you make this dish? Here’s a quick overview of the process! Make sure you follow the instructions at the recipe card at the bottom of the post while you’re cooking.

  1. Combine – In a large pan, combine the pulled pork, water, beer, masa, cumin, garlic powder, onion powder, and oregano. Bring the mixture to a simmer.
  2. Mix In – Add the diced jalapeno, green bell pepper, yellow onion, and Rotel to the pan. Continue simmering until the vegetables are soft.
  3. Taste – Taste the chili and season with salt as needed.
  4. Cook – Stir in the white beans and let the chili cook for an additional 5 minutes.
  5. Enjoy – Remove from heat and serve with your choice of garnishes such as shredded cheese, sour cream, cilantro, and crushed tortilla chips.

What’s the best way to reheat the leftovers?

Gently reheat on the stove over medium heat, adding a little water if the chili has thickened too much.

Ingredients

  • 4 cups smoked pulled pork
  • 4 cups beef or chicken stock
  • 4 ounces beer blonde ale, preferred
  • ¼ cup masa
  • 3 tablespoons cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1 whole jalapeno stem, seeds, and membranes removed
  • 1 whole green bell pepper diced, stem and seeds removed
  • 1 medium yellow onion diced
  • 1 can Rotel
  • 1 cup salsa verde
  • 1 15 ounce can navy or cannellini white beans drained

Garnish & Mix Ins

  • 1 cup shredded Mexican blend cheese
  • ½ cup sour cream
  • 3 tablespoons cilantro
  • 6 ounces tortilla chips crushed

Instructions

  • Add the pulled pork, water, beer, masa, cumin, garlic and onion powder, and oregano to the pan. Bring up to a simmer.
  • Add the sliced jalapeno, bell pepper, onion, Rotel, and salsa verde.
  • Continue simmering until the vegetables are soft.
  • Taste, and add salt if necessary.
  • Add the white beans and cook for another 5 minutes.
  • Remove from heat and garnish with your favorite toppings.

I really wanted to love this but there was way too much cumin. I’d start with one tablespoon and add from there. Three made it so that was the only flavor I was getting. Quite disappointed to detract so heavily from a delicious pork roast my husband smoked.

It is wild because a previous version I had out had significantly less cumin in it, and people were saying it wasn't flavorful enough. hah! Can't win 'em all!

This recipe was a hit at my house! I had a little extra time so sautéed the peppers first with an onion and garlic. Then finished the recipe as instructed. I used shredded pork carnitas that I found in the refrigerated section of the store. Will definitely be making again.
