Ingredients

  • 8 ounces goat cheese
  • 1 cup fresh blackberries (or raspberries)
  • 1/4 cup sugar
  • 1/4 cup red wine vinegar
  • 3 tablespoon white wine
  • 1 teaspoon red pepper flakes
  • 4 tablespoons honey
  • 6 pita bread rounds

Instructions

  • Preheat your smoker to 275°F.
  • In a small saucepan on the stovetop over medium heat, place the berries, sugar, vinegar, and wine.
  • Let it cook down for 15 minutes at a low simmer.
  • Cut the goat cheese log into rounds and place into a cast iron pan that's been lightly sprayed with cooking spray.
  • Pour the berry sauce over the goat cheese. Sprinkle with the red pepper flakes.
  • Place the pan into the smoker and let it cook for 20-25 minutes.
  • Put the pita rounds into the smoker during the last 5 minutes of cook time to let them warm up.
