Spring Roll Bowls

I love this recipe so much because it features sliced pieces of our Grilled Lemongrass Pork Tenderloin recipe, which is so incredibly flavorful you’ll be looking for all of the excuses to shove more of it into your face.

Spring rolls are one of my favorite foods, maybe ever, but I don’t LOVE the process of rolling them at home. Enter the Spring Roll Bowl!

I’m all about making time-consuming recipes less overwhelming without losing any flavor. See my Smash Mandu Dumplings and Egg Rolls in a Bowl for some examples of that. This is a very similar principle. Keep the flavor, ditch the fussy rolling. Win/win.

Yes, you can prepare the shrimp, noodles, and peanut sauce in advance. Store them in separate containers in the fridge, and assemble the bowls just before serving.

How Should I Store Leftovers?

Keep the components separate in airtight containers for up to 2 days. Avoid mixing the sauce with the other ingredients until serving to prevent sogginess.
