I decided to try it out on the pellet grill in casserole form to whip up some poached eggs while the casserole cooked. It worked so well and tasted incredible, and several of my kids said they preferred it that way.

I think sometimes people overthink sausage gravy. This one is so simple, and we don’t get too fancy with the seasonings, either. Buy your favorite breakfast sausage and let it do the work for you. It should be enough to infuse the gravy with all the flavor you need, beyond some extra black pepper.

How To Make Biscuits and Gravy Casserole On The Pellet Smoker

  1. Preheat the Grill – Set your Traeger to 375°F. Grease a 10×13 grill-safe casserole dish with butter or cooking spray.
  2. Prepare the Biscuits – Cut each biscuit into four pieces and spread them evenly in the casserole dish.

Ingredients

  • 1 tube refrigerated buttermilk biscuits
  • 2 pounds pork breakfast sausage
  • 1 teaspoon ground black pepper
  • 1/3 cup butter
  • 1/2 cup flour
  • 6 cups whole milk

Instructions

  • Preheat your grill to 375°F.
  • Grease a grill-safe 10×13 casserole dish with butter or cooking spray.
  • Cut each biscuit into four pieces. Place each piece into the casserole dish.
  • Brown the sausage and break it up as it cooks in a skillet over medium-high heat. After it is browned, turn the heat down to medium-low, season with the pepper, and add the butter to the skillet.
  • Let the butter melt. Once it is melted, add the flour to the sausage and butter mixture. Stir until it is combined, and let cook for 2-3 minutes.
  • Add the milk and stir frequently. Allow to come up to a low simmer, and let simmer while stirring until the mixture is thickened. If it is thicker than you’d like, you can add 1/2 cup additional milk.
  • Pour the sausage gravy over the top of the biscuits.
  • Place the casserole dish into the oven and let cook for approximately 30-45 minutes. You want the tops of the biscuits to be golden brown.
  • Remove from the grill and serve hot with poached eggs for bonus points.
