This post is courtesy of our severe fishing habit. These little shrimp aren’t actually shrimp at all, they are Spot Prawns, one of the most expensive (and most delicious) seafood available. We’re fortunate to have a short season for Spot Prawns in Washington, and we take advantage of it every year.

We’re calling it Ginger Scallion Shrimp today because shrimp are much more widely available than Spot Prawns, and the recipe will work just as well with regular grocery store shrimp as it does with Spot Prawns, so why not?

I recommend buying the biggest shrimp you can get your hands on, and make sure they are UNCOOKED. If you want to use this recipe with cooked shrimp, cook the sauce separately and add the shrimp at the very end. Just give it enough time to warm through before pulling from the heat and eating.

This recipe pairs well with steamed rice or an Asian-inspired noodle dish like Yakisoba or Pad See Ew, or hit the super easy button and whip up some simple rice paper noodles to pour all of this on.

How to Make Ginger Scallion Shrimp

  1. Heat oil in a large wok or skillet over medium heat. Add shrimp, garlic, ginger, and shallot. Sauté for 3-4 minutes.
  2. Stir in 2 tablespoons of butter and brown sugar until combined.
  3. Add sriracha, soy sauce, and dried chili peppers. Let simmer for 2-3 minutes, stirring frequently.
  4. Stir in the remaining butter until melted and fully incorporated.
  5. Top with freshly chopped scallions and serve hot.

Ingredients

  • 2 pounds shrimp
  • 2 tablespoons oil
  • 2 tablespoons fresh ginger chopped
  • 2 tablespoons fresh garlic chopped
  • 1 large diced shallot
  • 4 tablespoons butter divided
  • 4 tablespoons brown sugar
  • 2 tablespoons sriracha sauce
  • 1/4 cup high quality soy sauce
  • 6 dried whole chili peppers
  • 2 tablespoons scallions chopped

Instructions

  • In a large wok or skillet over medium heat, add the oil, shrimp, garlic, ginger, and shallot. Sauté for 3-4 minutes.
  • Add in 2 tablespoons of butter and the brown sugar. Stir until combined. Add the sriracha, soy sauce, and chili peppers. Let simmer, stirring frequently, for 2-3 minutes.
  • Add the last two tablespoons of butter and stir until it is melted and incorporated.
  • Top with lots of freshly chopped scallions. Serve hot.
