I love grilling pork chops because it is a fast and easy way to prepare a protein-rich meal without too much work (or dishes). Our Guinness-based BBQ sauce gives the chops incredible flavor. It’s a great use for that extra bottle of stout, and the sauce itself keeps well for future meals and freezes well, too.

This recipe features our custom OWYD Spicy Pork Rub. It has a hint of spice, but nothing too crazy. Spice lovers will think it is super mild, people intolerant to spice will probably call it “spicy”. Either way, pick some up. We use it on pulled pork, in our chili recipes, and even on chicken when we want a bit of a different flavor profile than our Roasted Chicken Rub provides.

Ingredients

  • Center-Cut Pork Chops – A uniform cut that grills evenly and holds up well to bold seasoning.
  • OWYD Spicy Pork Rub – Pick some up, ASAP! If you don’t have any (yet) but want to make this anyway, you can sub in your favorite pork rub.
  • Guinness – Guinness-lovers unite! This is a perfect way to use some of your stash.
  • Ketchup – The perfect barbecue sauce base, in my opinion. All of my homemade BBQ sauce recipes use it.
  • Apple Cider Vinegar – A little vinegar is necessary in any good barbecue sauce. It adds sharp acidity to cut through the richness.
  • Soy Sauce – Great for boosting the umami and saltiness.
  • Worcestershire Sauce – Worcestershire sauce contains anchovies, so keep that in mind if you are serving anyone with allergies!
  • Minced Garlic – Fresh only, please! Put the jarlic away. 😉
  • Dry Mustard Powder – This should be a staple in your spice cupboard.
  • Yellow Mustard – You can sub in Dijon or stone ground mustard if you’d like.
  • Black Pepper – Freshly ground works best!
  • Minced Onion – You can use onion powder if you don’t have fresh onion.
  • Garlic Salt – Garlic powder also works here. Taste and add a little extra salt if you need to.
  • Red Pepper Flakes – For some heat! If you can’t take the heat, omit it from the sauce.
  • Russet Potatoes – High starch content makes them ideal for fluffy mashed potatoes, but reds or yellows will work in a pinch.
  • Salted Butter – If you use unsalted butter, you’ll need to add a little extra salt.
  • Heavy Cream – Don’t sub in milk for this part, please. Half and half would be acceptable.
  • Kerrygold Dubliner Cheese – A sharp, slightly sweet Irish cheese that has the perfect melt and blends well into the potatoes.
  • Salt & Pepper – Season to taste. How much salt you’ll need to add depends on how much the potatoes absorbed while cooking.

How To Make Grilled Pork Chops with Guinness BBQ Sauce and Irish Mashed Potatoes

  1. Prep and Boil the Potatoes – Peel, wash, and quarter the potatoes. Boil in salted water until fork-tender, then drain and return to the pot to dry over low heat.
  2. Mash and Mix – Add butter and cream to the potatoes and mash until smooth. Season with salt and pepper, stir in the cheese, and keep warm.
  3. Preheat the Grill – Heat your grill to 325°F. Season the pork chops evenly with the Spicy Pork Rub.
  4. Make the Sauce – Combine all BBQ sauce ingredients in a saucepan. Simmer over medium heat until thickened slightly, about 15–20 minutes.
  5. Grill the Pork Chops – Grill chops for 10 minutes per side, then brush both sides with BBQ sauce. Cook to 140°F internal temp. Rest for 3–5 minutes before slicing and serving.

How should I store leftovers?

Keep leftover pork chops in an airtight container in the fridge for up to 4 days. Store the mashed potatoes separately.

Can I reheat the pork without drying it out?

Yes. Warm slices in a covered skillet over low heat with a splash of broth or extra sauce to keep them juicy.

Can this be made ahead?

Guinness BBQ Sauce

Cheesy Mashed Potatoes

  • 1 pound Russet potatoes
  • 1 stick salted butter
  • 1 cup heavy cream
  • 8 ounces Kerrigold Dubliner cheese shredded
  • Salt & Pepper to taste

Instructions

  • Preheat your grill to 325°F. Put a large pot of well-salted water on the stovetop to boil. Peel, wash, and dice your potatoes into quarters.
  • Season all sides of the pork chops with the Spicy Pork rub (or your favorite sweet & spicy bbq rub).
  • While the grill is preheating and the pork chops are cooking, combine all of the barbecue sauce ingredients in a saucepan and bring to a simmer.
  • Once the water boils, add the potatoes and cook until fork-tender.
  • Drain the potatoes well and place the pot back on the stovetop over low heat. Let the remaining liquid cook out, stirring frequently.
  • Add the butter and cream to the pot and mash until smooth. Add salt and pepper to taste.
  • Stir in the cheese and cover the pot to stay warm.
  • Once the grill preheats, add the pork chops. Cook for 10 minutes before flipping.
  • Continue cooking until the internal temperature reaches 130°. Next, paint with BBQ sauce on both sides and continue to cook until the internal temperature reaches 140°F. You can paint them with another coat of sauce if you want.
  • Slice the pork chops after a 3-5 minute rest, and serve with more of the Guinness BBQ Sauce and some Kerigold Dubliner Cheesy Mashed Potatoes.
