I LOVE a good hot dog. Sometimes I get stuck in a rut though, and just do the traditional American grilled hot dog with ketchup and mustard in a soft bun.

That can get real old, real fast, even if you are a huge hot dog fan.

For this recipe, we are smoking the hot dogs at a low temperature before searing them. This creates layers of flavor that a quick grill (or even worse, a boil…) can’t match. The Traeger does most of the work, letting the smoke seep into the meat before a final blast of heat crisps the skin and gives you the perfect bite. It’s this two-stage cook that sets the Traeger version apart.

Chicago-style hot dogs are all about the toppings, and each one adds its own sharp, bright, or crunchy element. Traditionally Chicago dogs don’t include ketchup, only mustard, onion, tomato, and pickle, but there are no rules here and I love ketchup so you’ll see it included in the photos here.
